A couple pictures & a recipe

We had great weather for camping this weekend - the sun was shining and it was toasty warm! We picked a lakeside spot this time which was great.
The water was like glass! (Still freezing cold though!)
Mattie did really well again. I bought another fence so we can almost fence off our entire campsite now. His outdoor bed hasn’t arrived yet so I moved his usual bed outside for him during the day.
I was a little more organized this time, so instead of bringing half the house, the kitchen sink and the elliptical, I had supper all cut up, marinated and ready to go. I had a pork roast that I had thawed, so I cut it up into kabob sized chunks and put it in a ziplock with this marinade:
- 1/2 cup soy sauce
- 1/4 cup water
- 2 tbsp lemon juice
- 2 tbsp oil
- 2 tsp brown sugar (I used a lot more)
- 2 cloves garlic, minced
- 1/2 tsp ground ginger
It was delicious! The Mountie did them on the bbq and they were mouth watering good! They had marinated for 24 hrs, so were very tasty! We had them with some prawns and then veggies which I had cut up and marinated ahead of time as well.
It all smelled so good when it was cooking - our neighbours were jealous! ![]()

I’m jealous too, dinner sounds amazing! We usually just eat hamburgers and hot dogs when we camp! *LOL*

Your photo looks amazing - it’s symmetrical!
Your marinade is reminiscent of an Indonesian dish I make. I use a sweet Indonesian soy sauce instead of regular soy sauce, but it’s very similar otherwise. Yum!
You know what? It sounds like fun! Ha!
